How do you choose who is white for playing chess ?

I’m learning how to play chess and was wondering how is the best way to decide which player will be white or black ?
And if you are playing the same opponent for several games in a row does the winner always play as white ?

The way I used to do it was to put a white pawn into my one hand and a black pawn into my other hand, behind my back so the other player can’t see. Then stick your hands out and ask them to choose.
After that, you rotate between white and black after each game.
